Vanderbilt University Supervisor, Concessions in Nashville, Tennessee

The Concessions Supervisor, Campus Dining is a key member of the Campus Dining Team within the Division of Administration at Vanderbilt University. The Concessions Supervisor is responsible for assisting in the leadership and oversight of all concessions, vending, portable, and in-seat service operations to ensure all food is prepared and served according to health and safety regulations, upholding facility cleanliness and sanitary requirements, and delivering excellent customer service to students, faculty, staff and event guests. Reporting directly to the Concessions General Manager, this position is responsible for assisting in managing hourly and not-for-profit staff and plays a large role in ensuring productive employee relationships which influences a positive team environment and embraces excellent customer service.

About the Campus Dining Department:

Vanderbilt Campus Dining takes pride in the culinary creations served from our kitchens. Our Dining program is highly decorated, the winner of many prestigious awards in the food service industry, including Best On-Site Food Service Operation in the Nation, Best Food Service Operator, the prestigious Ivy Award, and many more. We have main dining centers, restaurants and cafes, convenience stores, and we employ over 300 employees.

Key Functions and Expected Performance:

  • Assist in staffing, scheduling, training, and counseling of event associates

  • Directly supervise event day associates while having direct interaction with guests

  • Observes, evaluates, and documents job performances of cashiers and stand attendants

  • Ensures team members have the tools necessary to complete their jobs

  • Maintain and control high volume food and beverage inventory

  • Ensures quality of products and accurate preparation of all food and beverage items as listed on stand sheet.

  • Ensures a quality appearance of the concession stand at all times; ensures that all work stations and the back of stands and storerooms remain clean.

  • Maintains level of inventory for stand throughout shift; orders replacement stock as necessary.

  • Oversees and participates in stand set-up and closing procedures; prepares stand sheets, balances inventory, and closes out point-of-sale system with appropriate reports.

  • Train, educate, follow and enforce responsible service of alcoholic beverages and evaluate compliance within corporate procedures

  • Develop and enforce standards for service, sanitation, and product and food quality

  • Conduct physical audit of inventory and product, research and perform reconciliations

  • Analyzes and resolves all guest and associate problems with the assistance leaders.

  • Reports all needed stand repairs to leadership.

  • Thoroughly and accurately uses applicable systems (Purchasing Systems, Point-of-sale, Appetize and more)

  • Ensures that all security, safety and sanitation standards are achieved

  • Achieves daily sales, assigned cost and budget goals

  • Effectively verifies all opening and closing inventories

  • Executes required daily reporting in a timely manner

  • Ensures required department reports are completed and information is compiled at month end closing

  • Forecasts and adequately schedules team members to meet operational needs and desired targets

  • Ensures complete maintenance and on-site training of the current POS system and concession equipment

  • Uses all performance management tools to provide guidance and feedback to team

  • Promotes a cooperative work climate, maximizing productivity and morale

  • Conducts regular scheduled meetings to ensure lines of communication are open between management and team members

  • Oversees day to day activities of full-time team members

  • Ensures work is completed accurately and in a timely manner

  • Maintains proper working relationships with subcontractors and vendors

  • Serves as an integral part of the management team overseeing events and groups of staff as needed

    Supervisory Relationships:

This position does have direct supervisory responsibility over hourly food service employees; this position reports administratively and functionally to the Unit General Manager

Education and Certifications:

  • A high school diploma or GED is necessary.

  • An Associate’s degree from an accredited higher education institution is preferred.

    Experience and Skills:

  • At least 2 years of supervisory or management experience necessary. Food service experience preferred.

  • Proficiency in Word, Outlook, Excel, PowerPoint and POS System is necessary.

  • Strong communication (verbal, written, interpersonal) skills and an ability to communicate effectively with a diverse population is necessary.

  • Strong time management, organizational and multi-tasking skills and an eye for detail is necessary.

  • Demonstrated ability to deliver exceptional customer service is necessary.

  • Manage people, maintain confidentiality and be accountable for Vanderbilt assets is necessary.

Physical Demands and Work Environment:

  • Ability to work in an open aired environment during all climate conditions

  • Ability to taste and evaluate food and beverage products

  • Stamina to work 60 hours or more per week

  • Must be able to work extended shifts of 10 hours or more as business dictates

  • Must be flexible with schedule and able to work different shifts

  • Must be able to reach, lift, stoop, bend and perform extensive standing and walking (including stairs) throughout shift

  • Ability to lift up to 75 lbs. and frequently lift, push, pull, or carry up to 30 lbs.
